Cream Cheese Apple Muffins
Ingredients :
- Package cream cheese, softened 1 (3 ounce) cal
- Sugar 3/4 cup cal
- Eggs 2 nos cal
- Milk 1/2 cup cal
- Butter or margarine, melted 1/4 cup cal
- Lemon juice 1 tbsp cal
- Vanilla extract 1 teaspoon cal
- All-purpose flour 1 1/2 cups cal
- Baking powder 1 1/2 tsp cal
- Baking soda 1/2 tsp cal
- Salt 1/2 tsp cal
- Peeled, diced tart apples 1 cup cal
- Bran flakes cereal 1/2 cup cal
Method :

In a mixing bowl, combine the cream cheese, sugar, eggs, milk, butter, lemon juice and vanilla; beat until smooth. Combine the flour, baking powder, baking soda and salt; stir into cream cheese mixture just until moistened. Fold in apples and bran flakes.

Fill greased or paper-lined muffin cups two-thirds full. Combine topping ingredients; sprinkle over batter.

Bake at 375 degrees F for 20-25 minutes or until a toothpick comes out clean.
4.
Cool for 5 minutes before removing from pan to a wire rack.
