Indonesian fried rice is a popular dish in Southeast Asia. This nasi goreng recipe is Indonesian version of fried rice and served with fried egg. Nasi goreng had the same beginnings as other versions of fried rice as a safe, delicious way to avoid wasting rice. Frying the rice could prevent the formation of dangerous microbes, especially in pre-refrigeration technology Indonesia, and also to avoid the need to throw out precious food. Nasi goreng is traditionally served at home for breakfast and it is traditionally made out of leftover rice from the night before. Besides ingredients like shallot, tomato, pepper and chili, the rice is fried with scraps of chicken or beef; usually leftover from a chicken or beef dish.

Preparation Method

  1. 1 At least two hours in advance, or even the night before, steam-cook the Rice. Allow it to cool by spreading it on a baking sheet. When it is cool, cover and refrigerate.
  2. 2 Combine the Egg with the Sesame Oil, half the Salt and some freshly Ground Black Pepper, then set aside.
  3. 3 Heat a wok or large frying-pan over a high heat. Add the Oil and, when it is very hot and slightly smoking, add the Garlic, Onion, Ginger, the remaining Salt and some Black Pepper. Stir-fry for two minutes.
