Mexican Pasta

Mexican Pasta Ingredients :

  • Seashell pasta 1/2 pound 179 cal
  • Olive oil 2 tbsp 238 cal
  • Onions, chopped 2 nos 44 cal
  • Green bell pepper, chopped 1 nos 30 cal
  • Sweet corn kernels 1/2 cup 80 cal
  • Black beans, drained 1 (15 ounce) 662 cal
  • Peeled and diced tomatoes 1 (14.5 ounce) cal
  • Salsa 1/4 cup 35 cal
  • Sliced black olives 1/4 cup 954.5 cal
  • Taco seasoning mix 1 1/2 tbsp 30 cal
  • Salt To taste 0 cal

Mexican Pasta Method :

1.
Bring a large pot of lightly salted water to a boil.

2.
Add pasta and cook for 8 to 10 minutes or until al dente; drain.

3.
While pasta is cooking, heat olive oil over medium heat in a large skillet.

4.
Cook onions and pepper in oil until lightly browned, 10 minutes.

5.
Stir in corn and heat through. Stir in black beans, tomatoes, salsa, olives, taco seasoning and salt and pepper and cook until thoroughly heated, 5 minutes.

6.
Toss sauce with cooked pasta and serve.
